Blueberry Dessert Pancake Recipe

Our Blueberry Cobbler ice cream perfectly tops blueberry dessert pancakes in this delightful recipe. Here's how to make an amazing seasonal treat everyone will love!

Ingredients

  • 3/4 cup Hudsonville Blueberry Cobbler Ice Cream, melted
  • 2 tablespoons white vinegar
  • 1 cup flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • 1 cup fresh blueberries
  • additional butter, for pan
  • Hudsonville Blueberry Cobbler Ice Cream, frozen

Instructions

  • 1)

    Mix the melted ice cream and vinegar and let set for a minute or two.

  • 2)

    Whisk together dry ingredients.

  • 3)

    Mix in the egg, milk and melted butter.

  • 4)

    Heat a griddle or skillet over medium heat and melt butter in the pan.

  • 5)

    Pour about 1/3 cup of batter into the hot skillet and spread flat. Arrange a few blueberries on top.

  • 6)

    When batter starts to bubble and edges firm, flip pancake and cook for another 1-2 minutes until pancakes are cooked through.

  • 7)

    Once pancakes are cooked, top with a scoop of ice cream, serve and enjoy!
